Local Eats & Dining
Arlington, TX
There is a kind of Japanese restaurant that tries to do everything and ends up doing nothing well. Then there is Shinobi, and the difference is obvious the minute you sit down. Tucked into the Cooper Street corridor at 4960 S Cooper, this is a sushi and yakitori joint that treats both sides of its menu like they matter, and Arlington has been quietly falling for it since it opened.
What makes Shinobi worth your attention is the yakitori program. Most sushi places treat skewers like an afterthought, something for the one person at the table who does not eat raw fish. Shinobi builds whole meals around them. The chicken thigh skin skewers with green onion are the move that converts skeptics: crispy, savory, kissed by the grill in a way that makes you order a second round before you have finished the first. One regular swears by the bacon-wrapped okra, of all things, and the yakitori lunch specials (three skewers plus a maki or California roll for $13.99) might be the best under-$15 Japanese lunch in South Arlington right now.

The Fresh Salmon Program and Izakaya-Style Entrees
But do not sleep on the raw side. The fresh salmon program runs deep here. The grilled salmon fillet in a miso glaze, served over steamed rice with miso soup, avocado, cucumber, diced green onion and sesame seeds, is the kind of dish that makes you put your fork down between bites. The bento boxes are built the same generous way: miso soup, two gyoza, spring mix, and four pieces of California roll alongside your choice of entree, most of them in the $14 to $18 range.

Cold appetizers like the seared salmon with lime zest, sesame, and shichimi togarashi, or the yellowtail sashimi with thin-sliced serrano, give the dinner menu a sharper, izakaya-style edge that most Arlington sushi spots never attempt.

First Visit Recommendation
First visit? Go at lunch. The salmon lunch special (three pieces of salmon sashimi, three salmon nigiri, and a salmon maki roll, $15.99) is the highest-value introduction to what the kitchen does well. If you are more of a grill person, do the yakitori lunch combo instead, and start with one of the shishito peppers or the deep-fried jalapeno stuffed with cream cheese, crab, and spicy tuna while the skewers come off the grill.

Shinobi sits next to Calloway’s on S Cooper, in the same stretch as El Arroyo. Fair warning: it fills up fast on weekend evenings, and the dining room is not huge.
